Fire Roasted Tomato Soup


Ingredients:

2 medium onions, diced
3 cloves of garlic, minced
1 (28 oz) can Muir Glen fire roasted diced tomatoes
1 (8 oz) can tomato sauce
1 (6 oz) can tomato paste
4 cups water (or chicken stock)
1/2 tsp. pepper
2 cups milk

Directions:

Saute onion in olive oil until almost translucent
Add garlic and continue to saute a few minutes more
Add tomatoes, sauce, paste, & water
Bring to a boil, reduce heat, cover and simmer for 30 minutes
Puree in blender until desired consistency
Add milk and seasonings and continue to simmer for 10 minutes
Serve with sour cream and chips or grilled cheese sandwiches

Chicken Enchilada Soup


Ingredients:

1 can chicken broth
1 can cream of potato soup
1 bottle Tostito queso sauce
1 can chicken (or leftover chicken from chicken tacos)
1 pkg mild taco sauce (omit if using the leftover shredded chicken)
2 cups frozen corn
cumin to taste

Directions:

Put everything in crock pot and simmer 2-4 hrs
Serve with sour cream, tomatoes, & chips

My favorite part of these crock pot ingredients is the directions... put everything in the crock pot and turn it on. :)
