Nabiscos "Our Best Cheesecake"
Ingredients:

1 3/4 c. Nabisco graham cracker crumbs
1/3 c. softened butter
1 1/4 c. granulated sugar
3 (8 oz.) pkg. cream cheese, softened
2 tsp. vanilla extract
3 eggs
1 c. sour cream
1 (21 oz.) can cherry pie filling, or apple, or blueberry
Preheat oven to 350 degrees.

For the Crust:
Blend crumbs, butter and 1/4 cup sugar and press mixture firmly against bottom and up sides of an 8 inch springform pan. Place in refrigerator while you make filling.

For the filling:
Beat cream cheese until fluffy. Gradually add remaining 1 cup sugar and vanilla extract. Beat in eggs, one at a time. Blend in sour cream. Mix well and put filling into crumb-prepared pan.

Preheat oven to 350 degrees.

Bake for 60-70 minutes or until firm. Turn off oven, leaving oven door slightly ajar. Allow cake to remain in the oven for 1 hour. Cool cake in the pan. Chill for 4 hours or overnight. Remove sides of springform pan and top with cherry pie filling.

Makes 10 (about 2 1/4 inch) wedges.

This is the recipe we use in my family and t is soo good! :) My mom is the cheesecake queen! She makes the best cheesecake! :) She has come up with a few variations to this recipe which she has posted on her blog. :)



Chocolate Cheesecake
This is another one that my mom has adapted from Nabisco's "Our Best Cheesecake" recipe.

Total Time:5 hr 25 min

Ingredients:
1-3/4 cups Graham Cracker Crumbs
1/3 cup butter, melted
1-1/4 cups sugar, divided
3 pkg. (8 oz. each) Cream Cheese, softened
1-1/2 cups Sour Cream
2 tsp.vanilla
3 eggs
1 pkg. Guittard Milk Chocolate chips

PREHEAT oven to 350°F

For the crust:
Mix graham cracker crumbs, margarine and 1/4 cup of the sugar. Press firmly onto bottom and 2-1/2 inches up side of a springform pan; set aside.

For the filling:
Beat cream cheese and the remaining 1 cup sugar in large bowl with electric mixer on medium speed until well blended. Melt chocolate chips in microwave. Add melted chocolate to one cup of cream cheese mixture and then mix that back into the remaining cream cheeses mixture. Add sour cream and vanilla; mix well. Add eggs, one at a time, beating on low speed after each addition just until blended. Pour into crust.

BAKE 1 hour to 1 hour 10 min. or until center is almost set. Turn oven off. Open oven door slightly. Let cheesecake set in oven 1 hour. Remove cheesecake from oven; cool completely. Refrigerate at least 4 hours or overnight. Loosen cheesecake from rim of pan; remove rim. Store leftover cheesecake in refrigerator.
